Tahini

Ingredients:
  • 2 c sesame seeds
  • 1/4-1/2 c olive oil
  • salt

Preheat: 350°F     

Directions:
  1. Preheat oven to 350 degrees. Spread sesame seeds in a large baking pan and bake for 5 minutes. Mix and return to oven another 6-8 minutes. Do not allow to brown.
  2. Cool for 20 minutes.
  3. Add sesame seeds to the bowl of a food processor and grind for 1 minute, or until seeds have broken bown. With food processor on, drizzle in 1/4c olive oil and grind for 1-2 minutes more, or until a smooth paste forms. If mixture is too dry, add more olive oil, one tablespoon at a time. Season to taste. 
  4. Transfer to a mason jar. Store in refrigerator for up to one month.
  • The second time I made this it was not 'paste' like, it became runny. I think because the weather was extremely humid that day.. That's why I like to start small with the amount of oil..
