Chris' Peanut Butter Cookies

Ingredients:
  • 1 c butter (or margarine)
  • 225 g peanut butter
  • 150 g brown sugar
  • 150 g granulated sugar
  • 375 g flour
  • 1 1/2 tsp baking soda
  • 1 tsp baking powder
  • 2 tbsp cocoa powder
  • 1/4 tsp salt
  • 2 eggs
  • 1 tsp vanilla

Directions:
  1. Preheat oven to 375 degrees. 
  2. In mixer bowl cream butter, peanut butter, brown sugar and granulated sugar until light and fluffy.
  3. In medium bowl combine five dry ingredients: flour, baking soda, baking powder, cocoa powder.
  4. Beat in eggs and vanilla to the wet ingredients. 
  5. Gradually beat in dry ingredients just until combined (may not use it all, just until a spatual comes out clean from the dough).
  6. Roll 1-1.5 inch balls and place on ungreased cookie sheet 3 inches apart.
  7. With fork dipped in sugar, press and flatten each cookie making a criss-cross pattern.
  8. Bake 8-10 minutes, until golden. Cool on cookie sheet 5 minutes: transfer to cooling racks.
