Black Bean Burgers

- 1 (16oz) can black beans, drained and rinsed
- 1/2 green bell pepper cut into 2" pieces
- 1/2 onion, cut into wedges
- 3 cloves garlic, peeled
- 1 egg
- 1 TBSP chili powder
- 1 TBSP cumin
- 1 tsp Thai chili sauce or hot sauce
- 1/2 c bread crumbs
Servings: 4 Prep: 15 min Cook: 20 min
Directions:
- In a medium bowl, mash the beans with a fork until thick and pasty.
- In a food processor, finely chop the bell pepper, onion, and garlic. Stir into mashed beans.
- In a small bowl, stir together the egg, chili powder, cumin and chili sauce.
- Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together. Divide the mixture into four patties.
- If grilling, place patties on a slightly oiled sheet of aluminum foil and grill patties about 8 minutes on each side. If baking (in preheated 375* oven), Place patties on a lighlty oiled baking sheet and bake about 10 minutes each side.
- This recipe might be a bit too spicy for some.
- I need to work on having the burgers hold together better. Perhaps by either adding another egg or using fresh bread crumbs instead of dry.
