Black Bean Burgers

Ingredients:
  • 1 (16oz) can black beans, drained and rinsed
  • 1/2 green bell pepper cut into 2" pieces
  • 1/2 onion, cut into wedges
  • 3 cloves garlic, peeled
  • 1 egg
  • 1 TBSP chili powder
  • 1 TBSP cumin
  • 1 tsp Thai chili sauce or hot sauce
  • 1/2 c bread crumbs

Servings: 4     Prep: 15 min     Cook: 20 min     

Directions:

  1. In a medium bowl, mash the beans with a fork until thick and pasty.
  2. In a food processor, finely chop the bell pepper, onion, and garlic. Stir into mashed beans.
  3. In a small bowl, stir together the egg, chili powder, cumin and chili sauce.
  4. Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together. Divide the mixture into four patties.
  5. If grilling, place patties on a slightly oiled sheet of aluminum foil and grill patties about 8 minutes on each side. If baking (in preheated 375* oven), Place patties on a lighlty oiled baking sheet and bake about 10 minutes each side.
  • This recipe might be a bit too spicy for some.
  • I need to work on having the burgers hold together better. Perhaps by either adding another egg or using fresh bread crumbs instead of dry.
