Pumpkin Oatmeal Cookies

Ingredients:
  • 2 c flour
  • 1 1/3 c oats (quick or old fashioned)
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 c butter or margarine, softened
  • 1 c brown sugar
  • 3/4 c granulated sugar
  • 1 egg
  • 1 c canned pumpkin {NOT pumpkin pie filing}
  • 1 tsp vanilla
  • 3/4 c chopped walnuts
  • 3/4 c raisins

Prep: 15 min     Cook: 14 min     Preheat: 350°F     

Directions:

  1. Preheat oven to 350 degrees. 
  2. Grease cookie sheets or line with parchment paper.
  3. In meduim bowl combine the first 5 ingredients.
  4. In a large bowl beat butter and sugars until smooth and creamy. Add egg, pumpkin, and vanilla, beat until combined.
  5. Gradually add dry ingredients, beatiing after each addition. Stir in walnuts and raisins. 
  6. Drop dough onto cookie sheets. I use a 2TBS scoop. Bake about 14-16 minutes or ujntil slightly browned. Cool on pans 2 minutes, then remove to baking rack. Cool completely before storing.
  • If I am using Old Fashioned Oats, I sometimes run the oats through a mini chopper or blender before adding to the dry mixture.
